Laal Maas, the Rajasthani fire
Laal Maas means red meat, and the name says what you will see on the plate. This Rajasthani mutton curry gets its deep red from Mathania chilies.
Those chilies are prized for colour as much as heat, which is why the curry looks fierce but eats with a rounded, smoky depth.
